What makes good coffee? 

If you look for guides on making good coffee, one aspect you will likely always find is freshness.  This is the reason that the JACKSON COFFEE CO. roasts fresh beans daily in our store.  We want to get you the freshest beans you can get in Jackson.  Our roaster can roast many different styles of roasts, and we can deliver the fresh-roasted coffee to you while it is still fresh.  You will not have to concern yourself with doubts of how fresh your coffee is, since we write the roasting date right on the bag.

    Original bean quality is also another issue.  At JACKSON COFFEE CO. all of our coffee is 100% arabica.  It is high-grown, and hand-picked.  There are many species of coffee trees in the world.  The most flavorful beans available from any country are produced by arabica trees.  The trees flower and grow cherries, each cherry containing two coffee beans.  The quality of the bean depends on the type of tree, the soil, climate, altitude, and available light.  When coffee is graded AA or "Supremo" it has nothing to do with the taste of the cup, but the size of the original bean.  A large bean could lack the density needed for rich, deep flavor.  We use only the best grade beans from all around the world, unless a smaller bean can yield a better, more flavorful cup.

    The richness of the cup depends on the altitude at which the bean was grown.  Higher-grown beans mature slower, yielding a better-tasting, more flavorful bean.  Hand-picked coffee is necessary for the best coffee because the cherries on each tree mature at different times.  Hand-picking each bean ensures that only the mature, ripe cherries are selected to be part of your cup of coffee.

    The flavor of coffee is contained as a volatile oil within the bean, which is released only when the green (unroasted) beans are heated in a roaster.  The roasting period lasts about 15 minutes.  In lighter, drier roasts, the coffee oil remains in the bean.  In darker roasts, such as an espresso roast, or a French roast, the oil is released during the roasting process.  During the roasting process, the coffee beans grow darker, sweeter, and the coffee's natural acidity is tempered.
